In quest'opera crudamente realistica Zola affronta il tema del decadimento e della miseria materiale e morale delle classi subalterne ispirandosi alla vita degli operai di Parigi. Attorno all'«Ammazzatoio», la bettola in cui l'alcol offusca ogni disperazione, si muovono le figure dolorose - e sopra tutte si eleva quella di Gervaise - di chi cede alla lusinga del vizio rimanendo preda di una spaventosa rovina. L'Assommoir «arde e urla di tutte le fiamme e di tutte le cacofonie dell'inferno»: è una potente rappresentazione, veritiera e terribile, di una impossibile redenzione sociale.
